Oyster Mushrooms with Bacon

Ingredients: 500 g oyster mushrooms, 1 small onion, 150 g bacon
with fat, 2 dl white wine, 100 g bryndza, 2 dl heavy cream, thyme,
some cooking oil, salt, pepper
Preparation: Finely chop the onion, dice the oyster mushrooms, and
cut the bacon into strips. Heat some cooking oil in a skillet, add the
bacon, and fry until crispy. Remove the skillet from the heat and take
out the bacon. With the remaining bacon fat in the skillet, sauté the
chopped onion until translucent. Add the oyster mushrooms to the
skillet and sauté over high heat until they start to brown. Pour in the
white wine and cook until most of the liquid evaporates. Remove the
skillet from the heat, season the mushrooms with salt, pepper, and
thyme, then add the fried bacon and bryndza. Cook over low heat,
stirring constantly, until the cheese becomes creamy. Then pour in
the cream, bring to a boil, and thicken slightly.
Serving: Excellent as a topping for pasta dishes and a hearty energy
boost in the cold winter months.
