Spicy Oyster Mushroom Cream

Ingredients (for 4-6 servings): 500 g oyster mushrooms,
5 tbsp olive oil, 5 spring onions, 1 tsp green peppercorns Dijon
mustard, 1.5 dl heavy cream, 1 sprig of rosemary, salt, pepper
Preparation: Slice the spring onions, including the green parts,
then finely chop the oyster mushrooms (both caps and stems). In
a deep skillet, heat the olive oil over high heat. Add the onions and
mushrooms, and sauté over high heat until golden brown. Remove
the skillet from the heat, pour the cream over the mushrooms, add
the mustard and chopped rosemary. Season with salt and pepper
to taste. Cook over medium heat for 2-3 minutes until the cream
thickens. Serve cold, perfect with toast.
