Herb and Oyster Mushroom Egg Spread

Ingredients: 10 eggs, 250 g oyster mushrooms, 2 dl plain yogurt,
2 tsp mustard, 1 bunch of wild garlic, salt, pepper, nutmeg,
1 small bunch of chives, oil
Preparation: Hard-boil the eggs, then let them cool and peel them.
Mash them well with a fork.
Meanwhile, sauté the chopped mushrooms in a little oil until they are
browned, and towards the end, add the chopped wild garlic. Once all
the liquid has evaporated, season with salt, pepper, nutmeg, and the
finely chopped wild garlic and chives. Finally, mix well with yogurt
and mustard. Refrigerate for 1-2 hours to allow the flavors to meld.
Serving: Enjoy rolled in ham or spread on toast.
