Oyster Mushrooms Roasted in Duck Fat

Ingredients: 400 g duck fat, 500 g oyster mushrooms, salt, pepper,
chives
Preparation: In half of the duck fat, sauté the diced (0.5 cm)
oyster-mushrooms. Towards the end of cooking, season with salt and
pepper. Transfer the mushrooms to a glass container and pour the
melted duck fat over them until they are covered. Finally, refrigerate
once cooled.
Serving: Serve with toast and sprinkle with finely chopped fresh
chives.
